Q: Why did you start your business?
A: I started Live Juice with the intention to serve the Concord community by providing raw vegetable and fruit juices, nutrient-dense smoothies, and fresh salads. We try to use as much locally grown organic produce as possible. At Live Juice, our goal is to make it as convenient, and enjoyable as possible to help people include more vegetables and fruits in their diet. Whether it is through drinking a juice or smoothie, or eating a salad or soup, we want to make healthy food choices highly accessible.
Q: What are some key factors or decisions that contributed to the success of your business?
A: I chose a location with heavy foot traffic. I researched best practices at similar restaurants with high volume. The store runs very well. I always feel complimented when people ask me if Live Juice is a franchise. It's a testament to the fact that Dean, our GM, and I spent a long time refining our systems and operations.
Q: What are some challenging aspects of your business?
A: The typical restaurant owner challenges: managing food costs and employee retention.
Q: Do you feel you made any serious mistakes as you were starting or growing your business? Knowing what you know now, what would you have done differently?
A: There are a few things that I would have done differently. Most of them have to do with the construction of the restaurant. When I signed the lease, there was sawdust all over the space. We started from scratch, and I had no experience with building a kitchen.
The main thing I wish I would have done was to design the front of the house more efficiently to handle our increasing sales volume.
Q: What other advice or words of inspiration would you like to share?
A: Don't start a restaurant! Just kidding. Well, half kidding. If you do, make sure you have an extremely clear vision. The vision is everything.
